A complete meal without meat? How is this even possible? Growing up in the country, meat and potatoes were a staple, my mom served it to us nearly every night. Even now, I love BBQ season. Recently I’ve been hearing the benefits of a Vegan lifestyle, but I’ve never been able to take the leap.
Convinced that a Vegan diet is bland and unexciting I’ve been unwilling to try any Vegan menu options. When I saw the cover of “101 Vegan Recipes” I started to admit that maybe…I was wrong. The images on the cover show some exciting and colour menu options. I had to ask myself are the recipes as delicious as they look?
“101 Vegan Recipes” offers up a recipe for everyone. Some of the recipes called for ingredients I wasn’t familiar with (like palm hearts) , but other recipes were full of foods I was familiar with. I scanned through the recipe book and found a couple of recipes that interested me.
The first recipe I tried was “Mushroom Barley Soup”. I wasn’t sure that I’d enjoy this one, I’m used to Barley Soup made from a chicken carcass. I chose this recipe because I had all the ingredients already in my pantry. I was surprised at how much I enjoyed this soup as well as how simple it was to prepare. I ended up eating it for supper last night and again at lunch today. The mushrooms were a nice touch to the meatless soup.
The second recipe I tried was the “Luscious Chocolate Brownies”. They turned out delicious. They were moist and flavourful. Even the kids ate them. Not being a Vegan, I did have to purchase a few extra items like Vegan butter and Egg substitute.
I do have a couple of criticisms of the book. It lacks consistency in the formatting. Sometimes they will say 1/3 cup and other times they will say 1/3-cup. I also found what I believe to be omissions or grammatical errors that made the recipes difficult to follow. In the “Baechu Kimchi” recipe it instructs me to “Place cabbage and add the onions…” With a little thought you can muddle through them, but an inexperienced cook may have some difficulties. That said, the recipes that I did try were delicious and simple to make.
